About This Coffee
This is a washed SHB Grade 1 microlot from 3 brothers of the Padilla Family, located in La Coipa district, San Ignacio province, in the Cajamarca region of northern Peru.
THE PRODUCERS
Bernabe (24), Pedro (27) and Floiran (33) Padilla Chinguel are brothers and coffee farmers from La Coipa. Pedro and Floiran live in the village of El Progreso, while Bernabe is in the neighbouring hamlet of El Alcanfor.
Bernabe manages three farms called El Shon, La Cueva and La Pampa, which were purchased in 2014 and have a total area of 5 hectares, 4 of them dedicated to coffee (two farms have 1 hectare each, and the other has 2). They are located at 1780masl and he grows the varieties of Caturra, Pache, Typica and Catimor.
Pedro manages a farm called La Lucuma, which was purchased in 2012 and has an area of 3 hectares, 2 of them dedicated to coffee. It is located at 1880masl and he cultivates the varieties of Caturra, Bourbon and Catimor.
Floiran manages Finca Chupame El Pepino, which was purchased in 2008 and has an area of 8 hectares, 3 of them dedicated to coffee. It is located at 1690masl and cultivates the varieties of Pache and Caturra
On each of the farms, coffee is intercropped with other trees such as arracacha, banana and yucca. The farms have an average of 4,000 trees per hectare and produce an average of 20-25qq/ha per year.
THE PROCESS
Ripe cherries are pulped and then dry-fermented in vats for 24-48 hours. The coffee is then thoroughly washed, before being dried on a covered patio or roof for 12-18 days.
