The Swiss Water® Process
This is a washed MCM Grade 1 microlot from producer Nima Juarez and her farm El Roble in San Ignacio province, Cajamarca region.
Aleydy Yessenia Nima Juarez is a 29 year old farmer from Rumipite Alto, La Coipa district, San Ignacio province, in the Cajamarca region of northern Peru. Nima lives with her husband Keny and their 2 children and manages a single farm called El Roble which she purchased in 2015. The farm is located at 1,719masl and has an area of 3 hectares, all dedicated to coffee cultivation. There she grows the varieties of Catuai, Bourbon and Catimor, intercropped with banana and yucca.
THE PROCESS
Ripe cherries are pulped and then dry-fermented in vats for 30 hours. After thorough washing, the parchment is dried on a shaded patio for 8-10 days.
