About This Coffee

This is a fairtrade & organic certified, washed G1 MCM SHB coffee from Asociacon El Santuario in the Cajamarca region of northern Peru.

 

THE PRODUCERS

 

Asociacion de Productores Cafetaleros El Santuario, or Asprocafe Santuario is a young non-profit organization founded with 30 small producers in August 2017. Since then it has rapidly grown to represent 360 farmers dedicated to specialty production in the Cajamarca region of northern Peru. As well as providing a market for the membership's coffee, the association provides agronomical and post-harvest advice to farmers to help improve quality and sustainability throughout the supply chain. Around 70% of the production is located in San Ignacio province, with the high altitude district of La Coipa representing the largest concentration of El Santuario farmers.

 

Farms are situated at altitudes of 1,700 - 2,050masl with a total production area of 685 hectares. Varieties cultivated include Caturra (40%), Typica (30%), Bourbon (10%) and Pache (10%), as well as a little Catimor, Castillo and Mundo Novo making up the final 10%.

 

THE PROCESS

 

This lot was produced with a fully washed process. Ripe cherries are pulped and fermented for 16-24 hours, thoroughly washed and then sun-dried on raised African beds or patios until the optimum moisture content has been reached.

 

THE REGION

 

Cajamarca is located in northern Peru and is characterised by its extremely fertile soils and abundant altitude - ideal conditions for arabica coffee cultivation. The region occupies the northern Andes mountain range and the name is derived from the indigenous Quechuan language, the most widely spoken language of all the indigenous peoples of the Americas. 

 

Asoc. El Satuario source from farmers in the Cajamarcan districts of La Coipa, Huabal, Chirinos, Tabaconas, San Jose de Lourdes, San Jose del Alto, Bellavista and Satna Cruz.
