About This Coffee
This is an SHG EP grade, Rainforest Alliance certified coffee from Finca Los Papales in the Jinotega region of Nicaragua.
The estate has been in the Lopez family for over century and to this day grandparents, children and grandchildren continue to manage the estate together. The estate is principally managed by Victor Lopez, the 3rd generation of the family. Victor studied agronomy and brings a wealth of knowledge and passion to the farm and production which allows for exceptional quality. Victor's farm is one of the most impressive we have seen when it comes to quality, with all post-harvest processing carried out on site under strict protocol.
The growing altitude is between 1,300 and 1,500 meters and the varietals include Red Catuai, Java, Pacamara, Yellow Catuai, Caturra.
Cherries are selectively harvested at maximum ripeness - "super ripe cherries" - and are then floated to remove any subpar cherries. The selected cherries are mechanically depulped and demucilaged without a fermentation process and then washed in clean water. Drying is carried out on multi-stage raised beds and then finished in mechanical days with the whole process taking 5-10 days.
Jinotega is a region in north-central Nicaragua bordering Honduras. It is notable luscious, green terroir and rolling hills.
