Java Sunda Hejo - Kiara Manuk (2019 Crop)
About This Coffee
This is a fully washed microlot from smallholder farmers in the Ciwidey subregion of Sunda, Western Java, Indonesia.
THE PRODUCERS
This lot is made up with coffee from 26 smallholder farmers who deliver cherry to Tenjolaya Ciwidey washing station. Farms are typically 1.5ha in size and cultivate the varieties of Catimor and Tim-Tim at an altitude of 1,200masl.
THE PROCESS
Red ripe cherries are floated to sort by density so that only the densest, highest quality cherries are used for processing this top lot. Selected cherries are pulped within 6 hours of harvest and then dry fermented for 16 hours to break down the remaining sugary mucilage. The coffee is then thoroughly washed before patio drying for approximately 10 days, or until the optimum moisture content is reached.
THE REGION
The Sunda region, named after the eponymous Sundanese ethnic group, is located in Western Java. Manuk translates to bird in the Sudanese language and Kiara is the most famous indigenous tree from the Sunda region. One of the farmers has a Kiara tree containing a large birds nest which the locals named Kiara Manuk
