The Swiss Water® Process
This specially prepared grade 1 fully washed microlot comes from the village of Jaladri Cililin in the Sunda Ciwidey region of Western Java.
THE PRODUCERS
This lot is made up of coffee from 30 smallholders in the area around Tenjolaya Ciwidey. These small producers typically cultivate an average of 1.5ha of land at an altitude of around 1,200masl, and grow the varieties of Catimor, Tim-Tim and Typica.
THE PROCESS
A-typically for Indonesia, this coffee utilises a fully washed process whereby red ripe cherries are pulped within 6 hours of harvest, dry-fermented for around 16 hours and then thoroughly washed. The parchment coffee is then patio dried for 10-12 days, until the optimum moisture content is reached.
THE REGION
One of the kingdoms in the Sunda tatar region is called the Kingdom of Gegedug (gegedug in Indonesian means the mainstay or the most reliable). The kingdom was led by a king named Prabu Larang Jiwa, often called 'Eyang Haji'. With a wife named Dewi Sinta Langu, Prabu Larang Jiwa had a son named Raden Braja Dark, better known as Si Kasep Munding Jaladri. Jaladri was in fact a coffee producer in the West Java region during the Dutch colonial period in 1761 and produced one of the first coffees brought by the VOC.
