About This Coffee
This is a washed SHG grade microlot from producer José Gilberto Márquez's farm Finca El Durazno in the Montecillos region of south-west Honduras. This lot was produced as part of a collaborative project with Beneficio San Vincente. THE PRODUCER
José Gilberto Márquez is a small farmer from the community of Cabañas, La Paz department. Finca El Durazno is situated at 1,660masl and includes the varieties of Catuai Amarillo (60%) and Lempira (40%)
Some residents in Cabañas began to experiment with coffee cultivation in the year 2,000 after seeing the success of the sector in other communities. They initially began with varieties such as Typica, until 2011 when an outbreak of roya (leaf rust) decimated crops. Producers renewed their farms with resistant Catimor varieties such as Lempira and have been growing since.
THE PROCESS
Ripe coffee cherries are harvested and then transferred to the centralized beneficio (mill). The coffee is pulped and then moves directly to a mechanical demucilage machine. There is no need for a fermentation process, so the coffee is washed immediately after. After washing the coffee is dried in the sun on raised beds for an average of 15 days. It is turned every half hour and selected throughout the process to remove any imperfections.
THE REGION
The Montecillos region is notable for its high altitude and subsequently cool temperatures, which allow coffee cherries to mature slowly and develop increased complexity in the cup.
