This is a Honey processed SHG EP grade coffee from Finca El Olvido in El Salvador. Finca El Olvido is located in El Progreso, a village in the volcanic San Salvador growing region of the Santa Tecla muncipality in the La Libertad department of southwest El Salvador. Located at a growing altitude of 1,580 masl and comprised of about 42 hectares of land, this lot is 100% Bourbon variety. Cherries are rigorously sorted and measured with brix meters to ensure proper and consistent sugar content before gently processed with clean rainwater and transferred to patios for drying. Honey processing indicates a semi-washed process where the skin and pulp are removed, but some or all of the mucilage remains during drying.
