This is an SHB EP Grade Black Honey processed microlot from Finca Las Torres, which is located in the Rivas district of the Chirripo region of Costa Rica. This lot was harvested by the Urena family who have been harvesting since 2005 through Café Rivense del Chirripó, the micromill they started over ten years ago, located in Brunca Region, surrounding the Chirripó Mountain, the highest mountain in the country. Growing altitude for this lot ranges from 1350 masl - 1825 masl and varieties harvested include Red and Yellow Catuai, Caturra, and some Villasarchi. Coffees are dried on patio and raised beds. Black honey processing is generally the most labor intensive of the various honey processes as it is the most sheltered from light during drying, retains more mucilage, and takes longer to dry (around 2 weeks). Coffee is placed on drying beds for around 8-12 days, dried by 100% direct sun-power; with this process the humidity inside the bean decreases to 11% and the mucilage is dehydrated giving a black color to the parchment and concentrating its natural sugars, flavors and smells into the bean.
Coffee rests for two months in Grain Pro bags, and then the dry-mill process begins: the parchment that protects the coffee beans is removed and the beans are classified by density and size, with final selection done by hand.
The farm runs on a sustainable system in an effort to protect the environment and process wastes are re-instated as organic fertilizer.
