About This Coffee

ETS Nduwayezu coffee washing station is located in Gashikanwa District, Ngozi province, Northern Burundi. The washing station receives cherry from around 3,000 smallholder farmers in the surrounding hills, with altitudes ranging between 1750 and 1800masl. This is a fully washed coffee of the Bourbon variety.

 

THE PROCESS

 

At its arrival at the washing station, matured cherry is selected through water flotation and the picking team sorts the cherries in order to keep only cherries of high quality. This step is important for fine processing. The cherry skins are mechanically removed during pulping. After pulping, the sticky parchment goes straight to the fermentation tanks. The day after, the wet parchment will be washed and graded before soaking. After soaking the parchments is placed on raised African beds where it will dry in the sun for 2-3 weeks. During this period it is further handpicked, and carefully raked to ensure a consistent drying process. The raised beds help maintain airflow to facilitate the drying process.
